Fish Soup with Coconut Lime

Components:

  1. One pound of chunked white fish fillets (such cod, tilapia, or snapper)
  2. One tablespoon of coconut or olive oil
  3. One medium onion, chopped
  4. Two minced garlic cloves
  5. One inch of freshly grated or chopped ginger
  6. One sliced red bell pepper
  7. One carrot, thinly sliced
  8. One 14-ounce can coconut milk.
  9. Two cups of vegetable or fish broth
  10. One cup of water
  11. Lime juice, 1-2 tablespoons (to taste)
  12. One lime’s zest
  13. One teaspoon of ground coriander
  14. Half a teaspoon of cumin powder
  15. To taste, add salt and pepper.
  16. Chopped fresh cilantro (for garnish)
  17. Optional: One or two freshly sliced Thai or ordinary red chilies (for heat)

Directions:

Sauté the Aromatics: In a big pot over medium heat, warm the coconut or olive oil.
Add the grated ginger, garlic, and chopped onion. Sauté the onions until they are tender and transparent, about 3 to 4 minutes.

Include the Vegetables: Stir in the carrot and red bell pepper slices. The vegetables should start to soften after another two to three minutes of cooking.

Add Broth and Coconut Milk: Add water, fish or vegetable broth, and coconut milk. Mix to blend.
Add the lime zest, cumin, ground coriander, salt, and pepper. You can now add the diced chilies if you want some heat.
To enable the flavors to combine and the veggies to soften, bring the mixture to a simmer and cook for ten to fifteen minutes.

To ensure the fish is cooked through and can be easily flaked apart with a fork, add the chunks of fish to the pot and boil it gently for 5 to 7 minutes. Take care not to boil the fish too much.
