Flavorful Mediterranean Ground Beef Stir Fry

Ingredients
1 lb (450g) ground beef (or lamb for extra Mediterranean flavor)
1 tbsp olive oil
½ onion, diced
3 cloves garlic, minced
1 bell pepper, diced (red or yellow for sweetness)
1 zucchini, diced
½ cup cherry tomatoes, halved
½ cup Kalamata olives, sliced
2 tbsp sun-dried tomatoes, chopped
½ tsp cumin
½ tsp smoked paprika
½ tsp oregano
¼ tsp cinnamon (adds depth and warmth)
Salt & pepper to taste
Juice of ½ lemon
¼ cup feta cheese, crumbled
Fresh parsley, chopped (for garnish)
Instructions
Cook the Ground Beef:
Heat olive oil in a large skillet over medium-high heat.
Add ground beef and cook until browned, breaking it apart with a spatula.
Drain excess fat if necessary.
Sauté Aromatics:
Add diced onion and garlic, cooking until fragrant (about 2 minutes).
Add Vegetables & Spices:
Stir in bell pepper, zucchini, and cherry tomatoes.
Add cumin, paprika, oregano, cinnamon, salt, and pepper.
Cook for 5-7 minutes until vegetables are slightly tender.
Final Touches:
Stir in olives, sun-dried tomatoes, and lemon juice.
Let cook for another minute to combine flavors.
Serve & Garnish:
Remove from heat and sprinkle with feta cheese and fresh parsley.
Serve over quinoa, couscous, rice, or in pita bread!
