Recipe: Boiling Water Dough Pastries

Ingredients:

  • 2 cups all-purpose flour
  • 1 cup boiling water
  • Pinch of salt
  • Oil for frying (vegetable or canola)
Directions:
  1. To make the dough, put the flour and salt in a big mixing basin.
  2. Using a spoon or fork, stir constantly as you gradually add the hot water to the flour mixture. The flour will start to cook in the boiling water, which will make the dough easier to work with and give it a texture that is ready to fry.
  3. When the mixture starts to come together, knead it into a smooth, elastic dough with your hands, being cautious if the mixture is still hot. A little additional flour may be added if the dough is too sticky.

Split and Form:

  1. Separate the dough into balls that are about the size of a golf ball.
  2. Roll each ball into a round, flat disk on a lightly floured surface. You may push with your hands or a rolling pin.
  3. Cook the Pastries:
  4. In a deep-frying pan, heat the oil over medium heat. Depending on whether you like shallow or deep frying, you will need enough oil to partly or completely immerse the pastries.
  5. One or two dough discs should be carefully inserted into the heated oil. Fry them for two to three minutes on each side, or until they are puffed and golden brown on both sides.
  6. Using a slotted spoon, remove the pastries, then drain them on paper towels to get rid of any extra oil.
  7. Serving Ideas: For a sweet treat, you may top these pastries with powdered sugar or cinnamon sugar, or you can eat them hot and fresh.
