Flourless Vanilla Oatmeal Pancakes (Air Fryer Recipe)
Healthy, hearty, and naturally gluten-free, these pancakes are made with oats instead of flour, lightly sweetened, and infused with warm vanilla flavor. Soft on the inside, golden on the outside—air frying gives them a subtle crisp edge without the oil!

Ingredients: (Makes 6–8 small pancakes)
1 cup rolled oats (or quick oats)
2 ripe bananas
2 large eggs
1/4 cup milk of choice (dairy or non-dairy)
1 1/2 tsp vanilla extract
1/2 tsp baking powder
1/2 tsp cinnamon (optional)
Pinch of salt
1–2 tsp honey or maple syrup (optional)
Spray oil for air fryer basket or parchment
Optional Add-ins:
2 tbsp mini chocolate chips or blueberries
1 tbsp chopped nuts or shredded coconut
Instructions:
Make the Batter:
In a blender, combine oats, bananas, eggs, milk, vanilla, baking powder, cinnamon (if using), salt, and sweetener.
Blend until smooth and creamy (30–60 seconds).
Let batter rest for 5 minutes to thicken slightly.
Prepare the Air Fryer:
Preheat air fryer to 340°F (170°C) for 2–3 minutes.
Lightly grease the basket or line with perforated parchment paper or silicone molds.
Cook the Pancakes (Batch Style):
Scoop 2–3 tablespoons of batter per pancake into the air fryer basket, spacing them apart.
Air fry at 340°F (170°C) for 6–8 minutes, flipping at the 4-minute mark if your air fryer allows it.
(If your air fryer doesn’t allow flipping, cook for full 7–8 minutes until set and golden.)
Repeat with remaining batter.
Serve Warm:
Stack pancakes and top with:

A drizzle of maple syrup or honey
