Fluffy Banana Cottage Cheese Pancakes (Air Fryer Recipe)
Packed with protein, naturally sweetened with banana, and incredibly fluffy without any flour fuss!
Ingredients
1 ripe banana (medium-sized, very ripe)
1/2 cup cottage cheese (full-fat or low-fat)
2 large eggs
1/4 cup oat flour (or blended oats)
1/2 tsp baking powder
1/4 tsp cinnamon (optional)
1/2 tsp vanilla extract
Pinch of salt
Oil spray or parchment for lining
Instructions:
Make the Batter:
In a blender or food processor, combine banana, cottage cheese, eggs, vanilla, and cinnamon.
Blend until smooth.
Add oat flour, baking powder, and salt. Blend just until mixed (don’t overdo it).
Let the batter sit for 5 minutes so it thickens slightly.
Preheat the Air Fryer:
Preheat your air fryer to 330°F (165°C).
Line the basket or tray with parchment paper or use silicone muffin molds to hold the batter.
Cook the Pancakes:
Spoon 2–3 tbsp of batter per pancake onto the parchment/mold (leave space between them).
Air fry for 6–8 minutes, until the tops are set and the bottoms are lightly golden.
Flip carefully (if free-form) and cook for another 2–3 minutes.
If using silicone molds, no flip is needed—just cook a couple minutes longer.
Serving Ideas:
Top with Greek yogurt, nut butter, or fresh berries
Drizzle with maple syrup or honey
Sprinkle with chopped nuts or granola for texture
Tips:
Use a ripe banana for natural sweetness and a smooth blend.
If your batter feels too runny, add a spoonful more oat flour.
Cottage cheese blends best when it’s small curd or whipped.
Store leftovers in the fridge and reheat in the air fryer for 2–3 minutes.
