FLUFFY BRIOCHE AND TURKISH BREAD

INGREDIENTS:

  • 310g (2 ½ cups) 00 flour;
  • 30g (3 tbsp) sugar;
  • 3g (1 tsp) salt;
  • 4g (1 tbsp) dry yeast;
  • 1 egg;
  • 170ml (⅔ cup) warm milk;
  • 20g (1 12 tbsp) butter;
  • 50g (3 tbsp) cream cheese

METHOD:

  1. Whisk flour with salt and yeast. make a well in the center add sugar, milk and egg, whisk.
  2. Add cream cheese and knead the dough. Work softened butter in.
  3. Cover the dough and set aside for 1 hour.
  4. Cut into 8 portions, roll each into a ball, then set aside for 20 minutes.
  5. Press out excess air and roll again. Place into a round baking pan, set aside for 1 hour.
  6. Dust with flour and bake at 150C/300F for 20 minutes.
