Ingredients:

  • 200g (7 oz) dark chocolate (70% cocoa)
  • 3 large eggs, separated
  • 1/4 cup (60ml) heavy cream
  • 1/4 cup (50g) sugar
  • 1 tsp vanilla extract
  • A pinch of salt
  • 1/2 cup (120ml) whipping cream (for topping)
  • Cocoa powder or grated chocolate (optional, for garnish)

Instructions:

  1. Melt the Chocolate:
    • Break the dark chocolate into small pieces and melt it gently using a double boiler or in the microwave in 20-second bursts. Stir until smooth. Set aside to cool slightly.
  2. Whisk the Egg Yolks:
    • In a bowl, whisk the egg yolks with 2 tablespoons of sugar and a pinch of salt until light and creamy. Add the melted chocolate and vanilla extract, and stir until well combined.
  3. Beat the Egg Whites:
    • In a clean bowl, beat the egg whites with the remaining sugar until stiff peaks form. Be careful not to overbeat, as this can cause the mousse to become grainy.

  5. Combine:
    • Gently fold the egg whites into the chocolate mixture in batches, taking care not to deflate the foam. Once well incorporated, fold in the whipped cream until smooth and fluffy.
  6. Chill:
    • Spoon the mousse into individual serving dishes and refrigerate for at least 2 hours to set.
  7. Serve:
