Fluffy Chocolate Mousse Recipe
Ingredients:
- 200g (7 oz) dark chocolate (70% cocoa)
- 3 large eggs, separated
- 1/4 cup (60ml) heavy cream
- 1/4 cup (50g) sugar
- 1 tsp vanilla extract
- A pinch of salt
- 1/2 cup (120ml) whipping cream (for topping)
- Cocoa powder or grated chocolate (optional, for garnish)
Instructions:
- Melt the Chocolate:
- Break the dark chocolate into small pieces and melt it gently using a double boiler or in the microwave in 20-second bursts. Stir until smooth. Set aside to cool slightly.
- Whisk the Egg Yolks:
- In a bowl, whisk the egg yolks with 2 tablespoons of sugar and a pinch of salt until light and creamy. Add the melted chocolate and vanilla extract, and stir until well combined.
- Beat the Egg Whites:
- In a clean bowl, beat the egg whites with the remaining sugar until stiff peaks form. Be careful not to overbeat, as this can cause the mousse to become grainy.
- Whip the Cream:
- In another bowl, whip the heavy cream until soft peaks form. The cream should be thick but still light and airy.
- Combine:
- Gently fold the egg whites into the chocolate mixture in batches, taking care not to deflate the foam. Once well incorporated, fold in the whipped cream until smooth and fluffy.
- Chill:
- Spoon the mousse into individual serving dishes and refrigerate for at least 2 hours to set.
- Serve:
- Before serving, whip the whipping cream to soft peaks and pipe or spoon it onto the mousse. Garnish with a dusting of cocoa powder or grated chocolate for an extra touch.
