Fresh Carrot-Infused Homemade Cheese
Ingredients:
- 1 liter of milk
- 2 large carrots
- 200 g sour cream
- 2 eggs
- 1 tsp salt
- 1 tbsp chopped carrots
Directions:
- Heat the milk over medium heat until it’s hot but not boiling.
- Grate or blend the carrots, then squeeze out the juice.
- Mix the sour cream, eggs, and salt in a bowl.
- Once the milk is hot, slowly pour in the carrot juice.
- As the milk begins to boil, add the sour cream mixture and 1 tbsp of the chopped carrots.
- Continue cooking for about 10 minutes until the milk curdles and the whey separates.
- Prepare a strainer lined with cheesecloth, and pour the mixture into it, allowing the whey to drain.
- Transfer the cheese curds into a mold, place a weight on top, and let it set for 3-4 hours.
- Once the time is up, your fresh carrot-infused cheese is ready to enjoy!
