Fresh Vegetables Casserole (Mediterranean Style)
🛒 Ingredients
- 1 zucchini, sliced into rounds
- 1 cup broccoli florets
- 1 cup cherry tomatoes, halved
- 1 bell pepper, chopped
- 1 small onion, sliced
- 2–3 garlic cloves, minced
- ¼ cup black olives (optional)
- 2–3 tablespoons olive oil
- ½ teaspoon salt (or to taste)
- ½ teaspoon black pepper
- 1 teaspoon dried oregano or Italian seasoning
- ½ teaspoon chili flakes (optional)
- ¼ cup feta or mozzarella cheese (optional)
- 2 tablespoons breadcrumbs (optional, for crispy topping)
- Fresh basil or parsley for garnish
👩🍳 Instructions
Preheat your oven to 375°F (190°C) and lightly grease a medium baking dish with olive oil.
Wash and prepare all the vegetables. Slice the zucchini into even rounds, cut the broccoli into small florets, halve the cherry tomatoes, chop the bell pepper, and thinly slice the onion. Mince the garlic.
In a large bowl, combine zucchini, broccoli, cherry tomatoes, bell pepper, onion, garlic, and black olives (if using). Drizzle with olive oil and toss well to coat everything evenly.
Add salt, black pepper, oregano (or Italian seasoning), and chili flakes. Mix again so the seasoning spreads throughout the vegetables.
Transfer everything into the prepared baking dish and spread into an even layer. Sprinkle feta or mozzarella on top if desired. Add breadcrumbs for a crispy golden finish.
Bake for 25–30 minutes, until the vegetables are tender and slightly caramelized. If using cheese, broil for 2–3 minutes at the end for a bubbly golden top.
Remove from oven and let rest for 5 minutes. Garnish with fresh basil or parsley before serving.
