Fried rice with chicken
Components:
- • Two cups of cooked rice, ideally chilled; day-old rice is ideal.
- • Two skinless, boneless, diced chicken breasts
- • Soy sauce, two tablespoons
- • Two beaten eggs
- • One cup of mixed veggies, including maize, carrots and peas
- • Two minced garlic cloves
- • Two chopped green onions
- • Sesame oil, two tablespoons
- • To taste, add salt and pepper.
Directions:
- 1. Set your air fryer’s temperature for approximately five minutes at 200°C (400°F).
- 2. Add 1 tablespoon of soy sauce, a bit of salt, and pepper to a bowl and marinate the diced chicken breasts.
- 3. Put the marinated chicken in the air fryer basket after it has heated up. Cook until the chicken is crispy and cooked through, 8 to 10 minutes, shaking the basket halfway through. Take out and put aside.
- 4. Add a pinch of salt and pepper to the beaten eggs and scramble them in a different bowl. The eggs should be cooked through after 3–4 minutes of cooking in the air fryer basket, stirring occasionally. With the cooked chicken, remove and set away.
- 5. Toss the chopped green onions and minced garlic into the air fryer basket with the sesame oil. Cook until aromatic, stirring regularly, for 1 to 2 minutes.
- 6. Place the mixed vegetables in the basket of the air fryer and cook, stirring periodically, for 3–4 minutes, or until thoroughly cooked.
- 7. Put the cooked rice and the last tablespoon of soy sauce in the air fryer basket. Mix everything until it’s all properly blended.
- 8. Put the scrambled eggs and cooked chicken back in the air fryer basket. After stirring everything together, cook for a further two to three minutes, or until thoroughly cooked.
- 9. When finished, serve your tasty chicken fried rice in an air fryer hot, topped with more chopped green onions if you’d like.
