Ingredients:
1 thick slice of brioche or sourdough bread
1 tbsp butter (for toasting bread)
2 tbsp butter (for cooking mushrooms)
1 tbsp olive oil
2 cups cremini or button mushrooms, sliced
2 cloves garlic, minced
1 cup fresh spinach
1 tbsp soy sauce (or tamari for gluten-free)
½ tsp black pepper
½ tsp salt
¼ tsp red pepper flakes (optional)

Instructions:
Toast the Bread:
Heat 1 tbsp butter in a pan over medium heat.
Toast the brioche/sourdough slice until golden brown on both sides.
Remove and set aside.
