Cook Time: 15 minutes

Serves: 2

Ingredients

For the Garlic Butter Salmon:

2 salmon fillets (5–6 oz each, skin-on or skinless)

2 tbsp butter, melted

1 tbsp olive oil

2 garlic cloves, minced

½ tsp dried thyme (or parsley)

½ tsp paprika

Zest of ½ lemon

Juice of ½ lemon

Salt and pepper to taste

For the Veggies:

1 ½ cups fresh mushrooms, sliced (cremini or button)

2 cups baby spinach

1 tsp olive oil

Salt and pepper to taste

1 tsp garlic butter (or a small pat of regular butter)

Instructions

Prepare the Garlic Butter Sauce (1:00–2:00)

In a bowl, mix together melted butter, olive oil, garlic, lemon zest, lemon juice, paprika, thyme, salt, and pepper.

Pat salmon fillets dry and brush both sides generously with the garlic butter mixture.

Prepare the Mushrooms (2:00–3:00)

Toss sliced mushrooms with 1 tsp olive oil, a pinch of salt, and pepper.

Preheat the air fryer to 375°F (190°C) for 2–3 minutes.

Air Fry Salmon and Mushrooms (3:00–10:00)

Place salmon fillets skin-side down in the air fryer basket.

Add mushrooms around the salmon (use parchment liner if needed).

Air fry at 375°F (190°C) for 10–12 minutes, depending on the thickness of the fillets.

Salmon is done when it flakes easily and reaches an internal temp of 145°F (63°C).

Mushrooms should be tender and browned.

Sauté the Spinach (while salmon cooks) (5:00–10:00)

In a skillet over medium heat, add 1 tsp garlic butter.

Add spinach and sauté for 2–3 minutes until wilted.

Season with salt and pepper and set aside.

Assemble and Serve (10:00–12:00)

Plate the wilted spinach and mushrooms.

Top with salmon and drizzle with any extra garlic butter from the air fryer.

Serve with a lemon wedge and optional garnish of chopped parsley or parmesan.

Tips

Don’t overcrowd the air fryer—cook mushrooms separately if needed.

For a crispy top, broil the salmon for 1 minute after air frying.

Add chili flakes to the butter for a spicy kick.
