Ingredients:
- 2 ribeye or sirloin steaks (about 1-inch thick)
- Salt and pepper, to taste
- 1 tablespoon olive oil
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- Fresh thyme or rosemary (optional)
Instructions:
- Prepare the Steaks: Remove the steaks from the refrigerator and let them sit at room temperature for about 30 minutes. This helps them cook evenly. Season both sides generously with salt and pepper.
- Heat the Skillet: In a large skillet, heat the olive oil over medium-high heat until shimmering.
- Sear the Steaks: Add the steaks to the skillet. Sear for about 4-5 minutes on one side without moving them. Flip the steaks and cook for another 4-5 minutes for medium-rare, adjusting the time as needed for your preferred doneness.
- Add Garlic Butter: In the last minute of cooking, reduce the heat to medium and add the butter, minced garlic, and fresh herbs (if using). As the butter melts, use a spoon to baste the steaks with the garlicky butter.
- Rest the Steaks: Remove the steaks from the skillet and let them rest on a cutting board for 5-10 minutes. This allows the juices to redistribute.
- Serve: Slice the steaks against the grain, drizzle with the garlic butter from the skillet, and serve immediately. Enjoy with your favorite sides!
Tips:
- For extra flavor, marinate the steaks in a mixture of olive oil, garlic, and herbs for a few hours before cooking.
- Pair the steak with roasted vegetables or a fresh salad for a complete meal.
