This Mediterranean-style garlic flatbread is soft, flavorful, and infused with olive oil, fresh garlic, and aromatic herbs. It pairs perfectly with hummus, tzatziki, or olive tapenade and can be made in an air fryer, skillet, or oven!

Ingredients

For the Dough:

2 cups all-purpose flour (or whole wheat for a healthier option)

1 teaspoon salt

1 teaspoon sugar

1 teaspoon baking powder (for softness)

½ teaspoon dried oregano or thyme

¾ cup Greek yogurt (or plain yogurt)

2 tablespoons olive oil

2 tablespoons warm water (as needed)

For the Garlic Oil Topping:

3 tablespoons olive oil

2 cloves garlic, finely minced or grated

½ teaspoon dried oregano

½ teaspoon sumac or zaatar (optional, for a Mediterranean touch)

¼ teaspoon salt

Instructions

 Make the Dough

In a bowl, whisk flour, salt, sugar, baking powder, and dried herbs.

Add Greek yogurt and olive oil, then mix until a dough forms.

If needed, add 1-2 tablespoons of warm water to bring the dough together.

Knead for about 5 minutes until smooth and elastic.

Cover with a cloth and let it rest for 30 minutes (this helps it soften).

 Prepare the Garlic Oil

In a small pan, heat olive oil over low heat.

Add minced garlic and sauté for 30 seconds (don’t let it burn!).

Stir in oregano, sumac (or zaatar), and salt.

Remove from heat and set aside.

 Shape the Flatbreads

Divide the dough into 4-6 equal balls.

Roll each into a 6-inch circle, about ¼-inch thick.

Cooking Methods

Air Fryer Method (Easy & Quick)

Preheat air fryer to 375°F (190°C) for 2 minutes.

Brush one side of the flatbread with garlic oil.

Place in the air fryer basket (brush side up).

Air fry for 4-5 minutes until golden brown and slightly crispy.

Brush with more garlic oil and sprinkle extra herbs before serving.

Stovetop Method (Traditional & Soft)

Heat a cast-iron or non-stick skillet over medium heat.

Cook the flatbread for 2 minutes per side, until golden brown.

Brush with garlic oil while still warm.

Oven Method (For Batches)

Preheat oven to 400°F (200°C).

Brush both sides with garlic oil.

Bake for 8-10 minutes, flipping halfway through.

For extra softness, cover cooked flatbreads with a towel to keep warm.

Pair with dips like hummus, baba ganoush, or tzatziki.

Use whole wheat flour for a more authentic, fiber-rich version.

For cheesy garlic flatbread, sprinkle feta or mozzarella before air frying.
