Garlic Parmesan Grilled Chicken
Ingredients:
For the garlic parmesan sauce:
- 4 tablespoons butter
- 3 tablespoons Parmigiano Reggiano (Parmesan cheese), grated
- 4 cloves garlic, chopped
- 1 pinch red pepper flakes (optional)
- 1 tablespoon lemon juice
- 1 tablespoon parsley, chopped
- For the grilled chicken:
- 1 pound boneless and skinless chicken breasts or thighs, cut into bite-sized pieces
- 1 teaspoon Cajun seasoning
Instructions:
For the garlic parmesan sauce:
- Melt the butter in a pan over medium-low heat.
- Add the grated Parmesan cheese, chopped garlic, and red pepper flakes (if using) to the melted butter.
- Stir the mixture continuously until the cheese melts and the garlic becomes fragrant, about 2 minutes.
- Turn off the heat and mix in the lemon juice and chopped parsley. Set the sauce aside for basting.
For the grilled chicken:
- Season the chicken pieces with Cajun seasoning
- Thread the seasoned chicken onto skewers.
- Preheat a grill to medium-high heat
- Grill the chicken skewers, basting them with the prepared garlic parmesan sauce
- Cook the chicken for about 2-4 minutes per side, until it is cooked through and lightly charred on both sides
- Remove from the grill, baste once more with the remaining
