For this traditional German apple cake, use your favourite eating apples. Take it to a coffee morning or enjoy it with afternoon tea.
Ingredients:
- 2 large apples, peeled, cored, and thinly sliced
- 1 tablespoon lemon juice
- 1 cup (125g) all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup (115g) unsalted butter, softened
- 1/2 cup (100g) granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup (60ml) milk
- 2 tablespoons apricot jam or apple jelly, warmed (for glaze)
- Powdered sugar, for dusting (optional)
Directions:
Preheat the Air Fryer:
For around five minutes, preheat your air fryer to 320°F (160°C).
Prepare the Apples:
To keep the thinly sliced apples from browning, mix them with lemon juice in a basin. Put aside.
Mix Dry Ingredients:
In a another bowl, whisk together the baking powder, salt, and all-purpose flour.
Prepare the Batter:
- Beat the softened butter and granulated sugar in a sizable mixing basin until the mixture is light and fluffy.
One egg at a time, add them, beating thoroughly after each addition. - Add the vanilla extract and stir.
- Alternately add the milk and the dry components to the wet ingredients gradually, mixing just until incorporated.
Assemble the Cake:
- Apply some frying spray or butter to a round cake pan that fits within the air fryer basket.
- Evenly distribute half of the cake batter into the bottom of the pan that has been prepared.
- Place half of the apple slices in a row over the batter.
- Proceed with the leftover batter and cut apples.
Air Fry the Cake:
- Set the cake pan within the air fryer basket that has been warmed.
- A toothpick placed into the centre of the cake should come out clean after 25 to 30 minutes of cooking it at 320°F (160°C) in the air fryer.
Glaze the Cake:
- After the cake is done, take it out of the air fryer and allow it to cool for a little while in the pan.
- For a glossy finish, brush the warm apple jelly or apricot jam over the top of the cake.
Serve: - If desired, dust the cake with powdered sugar prior to slicing and serving.
