Golden Cauliflower Fritters (Air Fryer)
Ingredients (Makes ~10 fritters):
1 medium head of cauliflower (about 3–4 cups florets)
2 eggs
½ cup shredded cheese (cheddar, mozzarella, or parmesan)
¼ cup finely chopped green onions or parsley
¼ cup breadcrumbs (or almond flour for gluten-free)
2 tbsp all-purpose flour (or chickpea/oat flour for GF)
1 tsp garlic powder
½ tsp onion powder
½ tsp salt
¼ tsp black pepper
Optional: pinch of chili flakes or paprika for a kick
Olive oil spray

Instructions:
Prep the cauliflower:
Cut cauliflower into florets and steam or microwave until fork-tender (about 5–6 minutes).
Let it cool slightly, then pulse in a food processor until finely chopped — like couscous. (Or mash it with a fork for a chunkier texture.)
Squeeze out any excess moisture using a clean towel or cheesecloth — this step helps them crisp!
Make the fritter mix:
In a large bowl, combine the chopped cauliflower, eggs, cheese, green onions, breadcrumbs, flour, and all seasonings.
Mix well until it forms a thick, sticky batter.
Shape the fritters:
Scoop about 2 tbsp of the mixture and form into small patties or flattened balls.
You should get around 10 fritters.
Air fry:
Preheat air fryer to 375°F (190°C).
Lightly spray the basket with olive oil.
Place fritters in a single layer (you may need to do this in batches). Spray tops with a little oil too.
Air fry for 10–12 minutes, flipping halfway, until golden brown and crisp on both sides.
