Ingredients:
- 2 sheets of vegan puff pastry, thawed
- 2 tablespoons olive oil
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 2 cups mushrooms (portobello and cremini), finely chopped
- 1 cup spinach, roughly chopped
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/4 teaspoon ground nutmeg
- Salt and black pepper, to taste
- 1/2 cup breadcrumb
- 2 tablespoons non-dairy milk (for brushing)
Directions:
1. Preheat oven to 400°F (200°C).
2. Line a baking sheet with parchment paper.
3. Heat olive oil in a large skillet over medium heat.
4. Add onions and garlic; cook until softened, about 5 minutes.
5. Add chopped mushrooms, thyme, rosemary, and nutmeg.
6. Cook for 8-10 minutes until mushrooms release moisture and brown.
7. Stir in spinach until wilted.
8. Season with salt and pepper, then remove from heat.
9. Mix in breadcrumbs and parsley.
10. Let cool.
11. Roll out the puff pastry sheets on a floured surface.
12. Divide the mushroom mixture evenly and place it in the center of each sheet.
13. Wrap the puff pastry around the filling, sealing the edges tightly.
14. Brush the tops with non-dairy milk.
15. Place on the baking sheet and bake for 25-30 minutes, or until golden brown.
16. Serve warm, sliced into portions.
