Gooey Cream Cheese Cake Bars

Gooey Cream Cheese Cake Bars

These rich and indulgent cream cheese cake bars are the perfect combination of a soft, buttery base and a smooth, slightly gooey topping. With a delicate crackly sugar crust on top, they’re simple to make yet taste like a bakery-style dessert.

Ingredients

Base Layer:
½ cup (1 stick) butter, melted
1 cup granulated sugar
1 egg
1 teaspoon vanilla extract
1 cup all-purpose flour
½ teaspoon baking powder
Pinch of salt

Cream Cheese Layer:
8 oz (225 g) cream cheese, softened
1 egg
½ cup sugar

Topping:
2–3 tablespoons sugar (for a crisp, crackly top)

Instructions

Start by preheating your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or lightly grease it to prevent sticking.

To prepare the base layer, combine the melted butter and sugar in a mixing bowl. Whisk until smooth, then add the egg and vanilla extract, mixing well. In a separate bowl, combine the flour, baking powder, and salt. Gradually fold the dry ingredients into the wet mixture until a soft batter forms. Spread this evenly into the prepared pan, making sure the surface is level.

For the cream cheese layer, beat the softened cream cheese in a bowl until smooth and creamy. Add the egg and sugar, and continue mixing until the texture is silky and lump-free. Pour this mixture over the base layer and spread it gently to cover completely.

Sprinkle the sugar evenly over the top. This step is key to creating the signature crisp and slightly crackly crust once baked.

Place the pan in the oven and bake for 30–35 minutes. The edges should turn golden brown, while the center remains slightly soft. Avoid overbaking, as the gooey texture in the middle is what makes these bars special.

Remove from the oven and allow the bars to cool completely in the pan. Once cooled, slice into squares and serve.

Tips & Variations

The slightly soft center comes from the creamy topping, so don’t worry if it looks underbaked—it will firm up as it cools. For added flavor, you can mix in lemon zest, a sprinkle of cinnamon sugar, or even coconut flakes. Store leftovers in the refrigerator for up to five days, and bring them to room temperature before serving for the best texture.
