Grandma’s Mojo Potatoes

Grandmas Mojo Potatoes ENJOY THE YUMMY BITES AND HAVE THE DELICIOUS TASTE

Components:

  • Two pounds (900g) of tiny red potatoes or baby potatoes
  • one-fourth cup olive oil
  • 1/4 cup of fresh lime juice, or around two limes
  • four minced garlic cloves
  • One teaspoon of ground cumin
  • One teaspoon of dried oregano
  • Half a teaspoon of paprika
  • Half a teaspoon of cayenne pepper (optional; add more heat)
  • To taste, add salt and black pepper.
  • Two tablespoons of freshly chopped parsley or cilantro (optional for garnish)

Guidelines:

  1. Get the potatoes ready:Give the potatoes a thorough wash and scrub. Cut them into bite-sized pieces if they are bigger. Smaller potatoes should be left whole or halved.
  2. Bring the potatoes to a boil:Heat salted water in a big pot until it boils. When the potatoes are soft, add them and simmer for ten to fifteen minutes, depending on their size. To make sure they are easily pierced but not crumbling, test them with a fork.
  3. After draining, allow the potatoes to cool slightly.

Get the mojo marinade ready:

  • Mix the olive oil, lime juice, minced garlic, ground cumin, dried oregano, paprika, salt, black pepper, and cayenne (if using) in a big bowl.
  • Discard the potatoes: Bowl containing the marinade, add the heated potatoes. Gently toss the potatoes to ensure that the mojo mixture coats them evenly.
  • (Optional) Roast the Potatoes:After throwing the potatoes in the marinade, you can bake them for more flavor and crunch. Set the oven temperature to 425°F (220°C).
  • Arrange the marinated potatoes in a single layer on a baking pan. Bake for twenty to twenty-five minutes, or until the edges are crispy and golden brown. To ensure consistent browning, toss halfway through cooking.
  • Serve and garnish: If preferred, top cooked food with chopped cilantro or fresh parsley. Warm this up to go with your preferred main course.

Advice:

  • Marinating Time: Before cooking, let the potatoes sit in the mojo mixture for 30 to 60 minutes for a more flavorful result.
