Greek Cucumber Tzatziki with Chicken Gyros

Components:
Regarding the marinade for chicken:
One pound of skinless, boneless chicken thighs (or breasts, if desired)
Three teaspoons of olive oil
Two tablespoons of lemon juice
Three minced garlic cloves
One tablespoon of oregano, dried
One teaspoon of cumin powder
One teaspoon of paprika
To taste, add salt and pepper.
For the sauce of tzatziki:
One cup of Greek yogurt, plain
Half a cucumber, finely chopped or shredded (if preferred, remove the seeds)
One tablespoon of dried dill or two tablespoons of freshly chopped dill
One tablespoon of lemon juice
One minced garlic clove
One tablespoon of olive oil
To taste, add salt and pepper.
To Serve:
Flatbreads or pita bread
Red onion slices
Tomato slices
Fresh spinach or lettuce
Garnish with fresh parsley or dill, if desired.
Directions:
1. Let the chicken marinate:
- Add the olive oil, lemon juice, cumin, paprika, garlic, oregano, salt, and pepper to a bowl.
- After adding the chicken breasts or thighs, thoroughly coat them in the marinade.
- For optimal flavor, cover and chill for at least an hour or overnight.
2. Get the tzatziki sauce ready:
Greek yogurt, grated cucumber, lemon juice, garlic, olive oil, salt, pepper, and dill should all be combined in a bowl.
Mix thoroughly until creamy and smooth.
As necessary, taste and adjust the seasoning. Keep the tzatziki chilled until it’s time to serve.
3. Prepare the chicken:
Heat a grill pan or your grill to a medium-high temperature.
After removing the chicken from the marinade, grill it for approximately 6-7 minutes on each side, depending on its thickness, or until it is cooked through and the internal temperature reaches 165°F (75°C).
Slice the chicken into thin strips after letting it rest for a few minutes.
4. Put the Gyros together:
Pita or flatbreads can be warmed in a skillet or on a grill for a few seconds on each side.
To construct, put a plate of warm pita on it, top it with a generous amount of sliced chicken, and then garnish it with sliced lettuce, tomatoes, onions, and cucumber tzatziki.
If desired, garnish with dill or parsley.
