Greek Orzo Salad
Our Greek Orzo Salad is a symphony of textures and flavors. Tender orzo pasta is tossed with crumbled feta cheese, juicy cherry tomatoes, briny Kalamata olives, and fragrant fresh parsley. A drizzle of zesty Greek vinaigrette brings all the flavors together.

Ingredients:
1 cup orzo pasta
1 cup cherry tomatoes, halved
1/2 cup cucumber, diced
1/4 cup red onion, finely chopped
1/3 cup Kalamata olives, halved
1/2 cup chickpeas, rinsed and drained
1 cup fresh spinach, roughly chopped
1/4 cup feta cheese, crumbled (optional)
For the Dressing:
1/4 cup olive oil
2 tbsp red wine vinegar
1 tsp Dijon mustard
1 clove garlic, minced
1/2 tsp dried oregano
Salt and pepper to taste
Details to follow:
Cook the orzo in accordance with the directions on the package.
Remove the liquid, wash it with ice water, and set it away.
The orzo that has been cooked, cherry tomatoes, cucumber, red onion, olives, chickpeas, and spinach should all be mixed together in a large bowl.
To make the dressing, combine the following ingredients in a small bowl: olive oil, red wine vinegar, Dijon mustard, garlic, oregano, salt, and pepper.
Apply the dressing to the salad, then toss it to ensure that it is uniformly coated.
Crumbled feta cheese can be sprinkled on top, if desired.
Please allow to chill for twenty minutes before to serving for optimal flavor.
