Greek Souvlaki Salad

Ingredients:
For the Marinade:
  1. ¼ cup olive oil
  2. ¼ cup lemon juice (juice of 1 lemon)
  3. 1 tablespoon red wine vinegar
  4. 2 teaspoons garlic minced, or 2 large garlic cloves, minced
  5. 2 tablespoons dried oregano
  6. 1 teaspoon salt
  7. 1 pinch cracked pepper
For the Chicken:
2 skinless boneless chicken breasts, halved to make four fillets
For the Tzatziki:
  1. 1 cup plain Greek yogurt
  2. 1 tablespoon olive oil
  3. 1 lebanese cucumber, peeled, deseeded and grated
  4. 1 clove garlic minced
  5. 1 tablespoon lemon juice
  6. 1 pinch salt
For the Salad:
  1. 3 lebanese cucumbers, halved lengthwise and sliced thick
  2. 8 oz cherry tomatoes or grape tomatoes
  3. 1 green pepper, deseeded and sliced
  4. ½ red onion, sliced thinly
  5. 7 oz marinated feta cheese, cubed
  6. ½ cup pitted Kalamata olives
Instructions:
1. Make the Marinade: In a large bowl, whisk together olive oil, lemon juice, red wine vinegar, garlic, oregano, salt, and pepper.
2. Marinate the Chicken: Add the chicken fillets to the marinade and toss to coat evenly. Cover and refrigerate for at least 30 minutes, or up to 2 hours.
3. Make the Tzatziki: In a separate bowl, combine Greek yogurt, olive oil, grated cucumber, minced garlic, lemon juice, and salt. Mix well and refrigerate until ready to serve.
4. Cook the Chicken: Heat a grill pan or skillet over medium-high heat. Remove the chicken from the marinade and discard the marinade. Grill or pan-fry the chicken for 5-7 minutes per side, or until cooked through. Let rest for 5 minutes before slicing.
5. Assemble the Salad: In a large bowl, combine cucumbers, tomatoes, green pepper, red onion, feta cheese, and olives.
6. Serve: Arrange the salad on plates. Top with sliced grilled chicken and a generous dollop of Tzatziki. Serve with warm flatbreads on the side.
Tips:
For extra flavor, marinate the chicken overnight in the refrigerator.
Grill the chicken for a smoky flavor, or pan-fry for a quicker option.
Substitute store-bought Tzatziki if you prefer.
Add a handful of fresh spinach or arugula to the salad for extra greens.
Sprinkle with crumbled feta cheese before serving.
