Green Chilli Chicken Taquitos
Green Chilli Chicken Taquitos are crispy, rolled tortillas stuffed with seasoned chicken and green chilies, baked until golden and served with a creamy dip or salsa!
Ingredients:
- 2 cups cooked chicken, shredded (you can use rotisserie chicken for convenience)
- 1/2 cup cream cheese, softened
- 1/2 cup green chilies, diced (canned or fresh)
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 8-10 small tortillas (corn or flour)
- Olive oil for frying
- 1/2 teaspoon cumin (optional)
Instructions:
1. In a large bowl, combine the shredded chicken, cream cheese, diced green chilies, shredded cheese, garlic powder, cumin (if using), salt, and pepper.
2. Mix until well combined.
3. Take a tortilla and place a generous spoonful of the chicken mixture in the center.
4. Roll the tortilla tightly, folding in the sides as you roll to keep the filling inside.
5. Repeat with the remaining tortillas and filling.
6. In a large skillet, heat a few tablespoons of olive oil over medium heat.
7. Once the oil is hot, carefully place the taquitos seam-side down in the skillet.
8. Cook for about 3-4 minutes on each side, or until they are golden brown and crispy.
9. Work in batches if necessary to avoid overcrowding the pan.
10. Once cooked, remove the taquitos from the skillet and place them on a paper towel to drain excess oil.
11. Serve warm with your favorite dipping sauce, such as salsa or guacamole.
