  2. 1 small Beet, peeled and thinly sliced (or grated)
  3. 1 large Carrot, peeled and grated
  4. 4 cups Leafy greens (such as spinach, arugula, or mixed greens)
  5. 3 small Oranges, peeled and segmented

Condiments
– ⅓ cup white Balsamic vinaigrette

Nuts & Seeds:
– ¼ cup Pepitas (pumpkin seeds), toasted

Dairy:
– ½ cup Feta cheese or goat cheese, crumbled

Instructions:

1. Prepare the Vegetables and Fruits:

  •  Beet: Peel the beet and either slice it thinly with a sharp knife or use a box grater to shred it into thin strips.
  • Carrot: Peel the carrot and grate it using a box grater or a food processor.
  •  Oranges: Peel the oranges and segment them into bite-sized pieces, removing any seeds and pith.
  •  Avocado: Cut the avocado in half, remove the pit, and dice the flesh into cubes.

2. Assemble the Salad:

In a large salad bowl, combine the leafy greens, grated carrot, sliced or shredded beet, orange segments, and diced avocado.

3. Add Cheese and Pepitas:

  • Sprinkle the crumbled feta or goat cheese over the salad.
  • Top with the toasted pepitas for a nice crunch.

4. Dress the Salad:

  • Drizzle the white balsamic vinaigrette over the salad and toss gently to combine, ensuring that the dressing is evenly distributed.

5. Serve:
Serve immediately as a refreshing side dish or light main course.

This salad is a perfect combination of fresh, juicy, and creamy textures with the earthy flavor of beets, the sweetness of oranges, and the richness of avocado. It’s light but satisfying!
