Ingredients
Produce:
- 1 Avocado, pitted and diced
- 1 small Beet, peeled and thinly sliced (or grated)
- 1 large Carrot, peeled and grated
- 4 cups Leafy greens (such as spinach, arugula, or mixed greens)
- 3 small Oranges, peeled and segmented
Condiments
– ⅓ cup white Balsamic vinaigrette
Nuts & Seeds:
– ¼ cup Pepitas (pumpkin seeds), toasted
Dairy:
– ½ cup Feta cheese or goat cheese, crumbled
Instructions:
1. Prepare the Vegetables and Fruits:
- Beet: Peel the beet and either slice it thinly with a sharp knife or use a box grater to shred it into thin strips.
- Carrot: Peel the carrot and grate it using a box grater or a food processor.
- Oranges: Peel the oranges and segment them into bite-sized pieces, removing any seeds and pith.
- Avocado: Cut the avocado in half, remove the pit, and dice the flesh into cubes.
2. Assemble the Salad:
In a large salad bowl, combine the leafy greens, grated carrot, sliced or shredded beet, orange segments, and diced avocado.
3. Add Cheese and Pepitas:
- Sprinkle the crumbled feta or goat cheese over the salad.
