Grilled Pineapple Chicken with Veggies (Air Fryer)
Ingredients (Serves 3–4):
For the Chicken:
2 medium boneless skinless chicken breasts, cut into bite-sized pieces
1 ½ cups pineapple chunks (fresh or canned, drained)
2 tbsp soy sauce
1 tbsp olive oil
1 tbsp honey
1 tbsp BBQ sauce or teriyaki sauce (optional for smoky flavor)
1 tsp garlic powder
½ tsp paprika
½ tsp black pepper
Veggies:
1 medium zucchini, chopped
1 medium red bell pepper, diced
1 small red onion, chopped
1 cup broccoli florets
1 tbsp olive oil
Salt & pepper to taste
Optional: a pinch of chili flakes for heat

Air fryer (basket or oven-style)

Instructions:
Prep the chicken marinade:
In a bowl, mix together soy sauce, olive oil, honey, garlic powder, paprika, BBQ or teriyaki sauce (if using), and black pepper. Add the diced chicken and pineapple chunks. Toss well and marinate for at least 15 minutes (or overnight in the fridge for max flavor).
Season the veggies:
In another bowl, toss zucchini, bell pepper, onion, and broccoli with olive oil, salt, pepper, and chili flakes (if using).
Air fry the veggies:
Preheat your air fryer to 375°F (190°C) for 2–3 minutes.
Place the veggies in the basket in a single layer (work in batches if needed).
Air fry for 8–10 minutes, shaking halfway, until tender and lightly charred. Set aside.
Air fry the chicken & pineapple:
Add marinated chicken and pineapple chunks to the basket (drain off excess marinade first).
Air fry at 375°F (190°C) for 12–15 minutes, shaking halfway, until chicken is golden and cooked through (internal temp should hit 165°F/74°C).
Combine and finish:
Add the cooked veggies back to the basket with the chicken and pineapple.
Toss everything together and air fry for 2 more minutes to bring it all together.
To Serve:
Serve over rice, quinoa, or in a lettuce wrap
Top with a drizzle of extra BBQ sauce, a squeeze of lime juice, or chopped fresh cilantro
Optional garnish: sesame seeds or chopped green onions
Tips:
If using canned pineapple, drain well to avoid excess moisture.
Add a touch of sriracha or hot sauce to the marinade if you like heat.
Double the batch and use leftovers in wraps, tacos, or bowls the next day!
