Grilled Shrimp and Cucumber Salad Recipe

Ingredients:
1 lb large shrimp, peeled and deveined
1 tbsp olive oil
1 tsp garlic powder
1 tsp smoked paprika
Salt and black pepper to taste
2 cups sliced cucumbers
1 cup sweet corn kernels
1 cup shredded carrots
2 tbsp chopped fresh parsley
Juice of 1 lime
1 tbsp honey
1 tbsp rice vinegar
1 tbsp soy sauce
Instructions:
1. prepare the shrimp:
In a bowl, toss the shrimp with olive oil, garlic powder, smoked paprika, salt, and black pepper.
2. cook the shrimp:
Heat a non-stick skillet over medium-high heat. Cook the shrimp for 2–3 minutes per side until pink and fully cooked. Remove and set aside.
3. mix the dressing:
In a small bowl, whisk together lime juice, honey, rice vinegar, and soy sauce. Adjust to taste if necessary.
4. assemble the salad:
In a large bowl, combine the cucumbers, corn, carrots, and parsley. Add the cooked shrimp on top.
5. add the dressing:
Drizzle the dressing over the salad, toss gently to combine, and serve immediately.
