Ingredients:

1 small zucchini, sliced
1 red bell pepper, thinly sliced
1 yellow/orange bell pepper, thinly sliced
1 cup mushrooms, sliced (baby bella or cremini work well)
1–2 tbsp olive oil
1/2 tsp garlic powder
Salt & black pepper, to taste
For Assembly:
8 small flour or corn tortillas, warmed or lightly toasted
1/2 cup crumbled feta cheese
1/4 cup fresh basil, chopped or torn
Optional: squeeze of fresh lime juice, chopped cilantro, hot sauce
Instructions:
1. Prep the Veggies:
Wash and slice all vegetables into thin, uniform pieces to cook evenly.
2. Cook the Veggies:
Heat olive oil in a skillet or grill pan over medium-high heat.
Add zucchini, peppers, and mushrooms. Season with garlic powder, salt, and pepper.
Cook for about 7–10 minutes, stirring occasionally, until veggies are tender and slightly charred.
3. Warm the Tortillas:
Heat tortillas in a dry pan or directly over a flame until lightly toasted.
4. Assemble Tacos:
Fill each tortilla with a scoop of the grilled veggies.
Top with crumbled feta and fresh basil.
