Yield: 12 roll-ups
Ingredients
For the Zucchini:
2 medium zucchini
1 tbsp olive oil
¼ tsp salt
¼ tsp black pepper
For the Herbed Cheese Filling:
¾ cup cream cheese (softened)
¼ cup goat cheese (optional for tang; or use all cream cheese)
1 tbsp fresh parsley, finely chopped
1 tbsp fresh chives, finely chopped
1 tsp fresh thyme leaves (or ¼ tsp dried thyme)
1 small garlic clove, finely minced
½ tsp lemon zest
1 tsp lemon juice
Salt & pepper to taste
Optional Garnishes:
Extra chopped herbs
Cracked pepper
Chili flakes or a drizzle of balsamic glaze
Instructions
1. Prepare the Zucchini
Slice zucchini lengthwise into thin strips (about 1/8-inch thick) using a mandoline or a sharp knife.
Brush both sides with olive oil and season with salt and pepper.
2. Grill the Zucchini
Heat a grill pan (or outdoor grill) over medium-high heat.
Grill zucchini slices 2–3 minutes per side until grill marks form and they’re tender but not mushy.
Set aside to cool on paper towels (this absorbs excess moisture).
3. Make the Herbed Cheese Filling
In a bowl, combine cream cheese, goat cheese (if using), chopped herbs, garlic, lemon zest, and lemon juice.
Mix until smooth and creamy.
Season to taste with salt and pepper.
4. Assemble the Roll-Ups
Spread 1–2 teaspoons of the cheese mixture on one side of each zucchini slice.
Roll up gently from one end to the other.
Place seam-side down on a plate or serving tray.
5. Garnish and Serve
Garnish with more herbs, cracked pepper, or a light drizzle of balsamic glaze.
Serve chilled or at room temperature.
Notes & Tips
Zucchini thickness: If slices are too thick, they won’t roll well. If too thin, they’ll tear. Aim for about 1/8 inch.
Grilling tip: Don’t overcook the zucchini—it should be pliable, not soggy.
Make ahead: You can prepare roll-ups a few hours in advance and refrigerate. Bring to room temp before serving for best flavor.
Filling variations: Try adding sun-dried tomatoes, olives, or feta for variation.
Vegan option: Use vegan cream cheese and skip the goat cheese.
Frequently Asked Questions
Q: Can I use a different vegetable instead of zucchini?
A: Yes! Eggplant slices or grilled bell peppers can work well too.
Q: Can I bake instead of grill the zucchini?
A: Yes. Bake the slices at 400°F (200°C) for about 8–10 minutes on parchment until tender.
How long do these last in the fridge?
Best enjoyed within 24 hours, but they can last up to 2 days if tightly covered.
Q: Can I freeze these?
A: Not recommended. The texture of zucchini and cream cheese changes when frozen and thawed.
