Perfect for making in advance, it tastes great warm or cold and goes nicely with a dollop of yogurt or a honey drizzle.
Ingredients:
1 cup oats (rolled oats work best)
1 large apple, peeled and chopped
3 tbsp honey (or maple syrup as a substitute)
1 tsp vanilla extract
1 tsp cinnamon
½ tsp baking soda
½ tsp baking powder
3 tbsp yogurt (plain or Greek)
2 eggs
1 tbsp coconut oil (melted)
Instructions:
Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease an 8-inch round or square cake pan with a little butter or coconut oil.
Prepare the Batter:
In a blender or food processor, grind the oats into a coarse flour-like consistency.
In a large mixing bowl, combine the ground oats, cinnamon, baking soda, and baking powder.
In a separate bowl, whisk together the eggs, honey, vanilla, yogurt, and coconut oil until smooth.
Mix in the Apples:
Stir the chopped apples into the wet ingredients. Then, add the wet mixture to the dry oat mixture and stir until well combined.
Bake the Cake:
Pour the batter into the prepared cake pan and spread it evenly.
Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Cool and Serve:
Let the cake cool for a few minutes before slicing. Serve warm or at room temperature for a healthy breakfast or snack.
Notes:
Texture: For a smoother texture, you can blend half of the oats into oat flour before mixing.
Sweetener: Adjust the sweetness by increasing or decreasing the amount of honey or maple syrup.
Serving Suggestions: This cake pairs wonderfully with yogurt, fresh fruit, or a drizzle of almond butter. It can also be topped with a sprinkle of powdered sugar or cinnamon.
Storage: Store in an airtight container in the refrigerator for up to 5 days. Reheat in the microwave for a few seconds if desired.
Freezing: You can freeze individual slices for up to 3 months. Wrap them tightly in plastic wrap and store in a freezer-safe bag.
This healthy oatmeal apple cake is a great option for busy mornings, providing a wholesome balance of fiber, protein, and natural sweetness.
