Healthy Chia Seed Pudding with Pistachios

3 tablespoons chia seeds
1 cup unsweetened almond milk (or milk of choice)
½ teaspoon vanilla extract
1–2 teaspoons honey or maple syrup (optional)
Pinch of salt
Toppings
2–3 tablespoons shelled pistachios, roughly chopped
Fresh berries (optional)
Coconut flakes (optional)
Extra drizzle of honey (optional)
👩🍳 Instructions
1️⃣ Mix
In a bowl or jar, whisk together:
Almond milk
Vanilla
Sweetener (if using)
Pinch of salt
Stir in chia seeds and mix thoroughly.
2️⃣ Prevent Clumps
Let sit for 5 minutes, then stir again to break up any clumps.
3️⃣ Chill
Cover and refrigerate for at least 2 hours, preferably overnight, until thick and pudding-like.
