Hearty Broccoli and Vegetable Casserole (Air Fryer Recipe)
Introduction
This air fryer broccoli and vegetable casserole is a wholesome and hearty dish that’s packed with nutrients and flavor. It combines fresh broccoli, carrots, bell peppers, and onions in a creamy cheese sauce, topped with breadcrumbs for a crispy finish. Ingredients:
Vegetables:
2 cups broccoli florets (small pieces)
1 carrot, thinly sliced or diced
1/2 red bell pepper, chopped
1/2 yellow onion, finely chopped
1/2 zucchini, diced (optional)
2 cloves garlic, minced
Sauce:
2 tbsp butter
2 tbsp all-purpose flour
1 cup milk (whole or 2%)
1/2 cup shredded cheddar cheese
1/4 cup grated Parmesan cheese
Salt & pepper to taste
1/2 tsp dried thyme or Italian seasoning
Topping:
1/2 cup breadcrumbs (Panko or regular)
1 tbsp olive oil or melted butter
2 tbsp grated Parmesan (optional)
Instructions:
Pre-Cook Vegetables
To ensure tenderness, lightly steam the broccoli, carrots, and zucchini for 3–4 minutes. You can also microwave them with a tablespoon of water, covered, for about 3 minutes.
Prepare the Cheese Sauce
In a saucepan or microwave-safe bowl:
Melt butter, whisk in flour to form a roux.
Slowly add milk, stirring constantly to avoid lumps.
Add cheddar, Parmesan, thyme, salt, and pepper.
Cook until thick and creamy (about 3–5 minutes).
Combine Everything
In a large bowl, mix steamed vegetables, chopped bell pepper, onion, and garlic.
Pour the cheese sauce over the veggies and mix to coat evenly.
Assemble in a Baking Dish
Use a 7-inch round or square baking dish that fits your air fryer.
Spoon in the mixture and level it out.
In a small bowl, mix breadcrumbs with oil or melted butter and sprinkle on top of the casserole.
Air Fry
Preheat air fryer to 350°F (175°C) for 3 minutes.
Place dish in the air fryer basket.
