INGREDIENTS
For the Dough:
  • 1 egg
  • 1 teacup of oil
  • 1 teaspoon of yogurt
  • 1 teaspoon of water
  • 1/2 tablespoon of salt
  • 1 packet of baking powder
  • 1 tablespoon of vinegar
  • 4.5-5 cups of flour
For the Filling:
  • 3 dry onions
  • 3 tablespoons of oil
  • 500 g medium-fat ground beef
  • Salt
  • Black pepper
  • Oregano
  • Ground red pepper
For the Topping:
  • 1 egg yolk
  • 1 tablespoon of milk
INSTRUCTIONS
For the Dough:
  • In a mixing bowl, combine 1 egg, teacup of oil, yogurt, water, salt, baking powder, and vinegar. Mix well.
  • Gradually add 4.5-5 cups of flour to the mixture, kneading until you have a smooth and elastic dough. Cover it with a clean cloth and let it rest for 30 minutes.
For the Filling:
  • Finely chop the dry onions.
  • In a pan, heat 3 tablespoons of oil and sauté the chopped onions until they turn translucent.

  • Add the ground beef and cook until it’s browned and cooked through.
  • Season the mixture with salt, black pepper, oregano, and ground red pepper according to your taste. Remove it from heat and let it cool.
Assembly:
  • Roll out the rested dough on a floured surface until it’s very thin, almost paper-thin.
  • Cut the dough into small squares, about 4×4 cm in size.
  • Place a small amount of the prepared beef filling in the center of each dough square.
  • Fold the dough over the filling to create a triangle or rectangle shape and press the edges to seal them tightly.
  • In a large pot of salted boiling water, cook the Manti until they float to the surface, usually for about 5-7 minutes. Remove them with a slotted spoon and place them in a serving dish.
For the Topping:
  • In a small bowl, whisk together 1 egg yolk and 1 tablespoon of milk.
  • To Serve:
  • Drizzle the egg yolk and milk mixture over the cooked Manti.
  • Optionally, you can top them with some melted butter or garlic yogurt sauce.
