Ingredients
1 cup cottage cheese
2 large eggs

Instructions

Preheat your oven to 200°C (400°F) and line a baking tray with parchment paper to prevent sticking.

In a blender, combine the cottage cheese and eggs. Blend until the mixture becomes completely smooth and lump-free. If you’re using garlic powder, Italian seasoning, salt, or pepper, add them in at this stage and blend again briefly.

Pour the mixture onto the prepared baking sheet and spread it evenly into a thin, flat layer. Try to keep the thickness consistent so it cooks evenly.

Place the tray in the oven and bake for 25–30 minutes, or until the edges turn golden and the center is set. The flatbread should be firm but still slightly soft to the touch.

Remove it from the oven and, if desired, sprinkle mozzarella cheese over the top. Return it to the oven for 1–2 minutes until the cheese melts.

Allow the flatbread to cool slightly before lifting it from the parchment paper.
