Ingredients (Makes about 12 cookies)
- 1 cup almond flour
- ½ cup whey protein powder (unflavored)
- ¼ cup coconut oil, melted
- ¼ cup maple syrup or honey
- 1 teaspoon baking soda
- ½ teaspoon cinnamon
- ¼ teaspoon sea salt
- ½ cup dark chocolate chips (70% cacao or higher)
- ½ cup sliced almonds
- ¼ cup unsweetened shredded coconut
Instructions
Start by preheating your oven to 350°F (175°C) and lining a baking sheet with parchment paper. This prevents sticking and makes cleanup easier.
In a large mixing bowl, combine the almond flour, whey protein powder, baking soda, cinnamon, and sea salt. Stir well to evenly distribute the dry ingredients. The almond flour gives these cookies a naturally nutty flavor, while the protein powder adds structure and nutritional value.
Next, pour in the melted coconut oil and maple syrup (or honey). Mix everything together until a thick dough forms. If the dough feels too dry, you can add a teaspoon of water or milk to help bring it together.
Gently fold in the dark chocolate chips, sliced almonds, and shredded coconut. These add texture, healthy fats, and bursts of rich flavor in every bite.
Using a tablespoon, scoop portions of dough onto the prepared baking sheet. Space them about 2 inches apart. Lightly flatten each cookie with your hand or the back of a spoon, as they won’t spread much during baking.
