High-Protein Snacking Cottage Cheese Chips
Prep Time: 10 minutes
Cook Time: 10-15 minutes
Total Time: 20-25 minutes
1/2 cup shredded cheddar cheese (or your preferred cheese)
1 tablespoon ground flaxseed (optional, for added fiber and omega-3s)
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon smoked paprika (or regular paprika)
1/4 teaspoon sea salt (or to taste)
1/4 teaspoon black pepper
1 tablespoon olive oil (for greasing)
1/2 cup crushed rice cakes or almond flour (to create a crunchy texture)
Instructions:
Preheat Oven:
Preheat your oven to 375°F (190°C).
Prepare the Cottage Cheese Mixture:
In a medium-sized bowl, combine the cottage cheese, shredded cheddar cheese, ground flaxseed (if using), garlic powder, onion powder, smoked paprika, salt, and pepper. Mix everything well to combine. The mixture should be creamy and slightly thick.
Prepare the Base for Crunch:
On a baking sheet lined with parchment paper, spread out the crushed rice cakes or almond flour evenly. You can pulse the rice cakes in a blender or food processor to crush them into smaller pieces or use almond flour directly for a finer texture.
Shape the Chips:
Spoon small dollops of the cottage cheese mixture onto the crushed rice cakes or almond flour, gently spreading each dollop into a thin, round shape about 1-2 inches wide. You should be able to make about 12-15 chips depending on the size.
Bake:
Lightly drizzle or brush the tops of the chips with olive oil. Place the baking sheet in the oven and bake for 10-15 minutes, or until the chips are golden and crispy on the edges.
Cool and Serve:
Once the chips are done, let them cool for a few minutes on the baking sheet. They’ll crisp up even more as they cool. Enjoy these crunchy, high-protein snacks!
Optional Toppings:
You can sprinkle some fresh herbs like parsley or chives on top of the chips before baking for an extra burst of flavor.
Serve with a low-calorie dipping sauce like salsa, Greek yogurt, or a high-protein ranch dip.
These chips are not only high in protein, but they also provide a good amount of healthy fats and fiber. Perfect for snacking or as a savory snack with your favorite meal!
