Ingredients:
For the Dough (Homemade Option):
1 ½ cups whole wheat flour (or all-purpose)
½ cup Greek yogurt (high-protein)
1 tsp baking powder
½ tsp salt
Or use pre-made pizza dough or whole wheat tortillas.
For the Filling:
1 cup lean ground turkey (or shredded cooked turkey)
1 cup fresh spinach, chopped
½ cup low-fat mozzarella cheese, shredded
¼ cup cottage cheese (for extra protein, optional)
1 tsp olive oil
1 clove garlic, minced
½ tsp onion powder
½ tsp black pepper
½ tsp Italian seasoning
¼ tsp salt
1 tbsp tomato sauce (optional for extra flavor)
1 egg, beaten (for egg wash)
Instructions:
Prepare the Dough (If Making Homemade)
In a bowl, mix flour, baking powder, and salt.
Add Greek yogurt and mix until dough forms.
Knead for 1-2 minutes, then cover and let rest.
Make the Filling
Heat olive oil in a pan over medium heat.
Add ground turkey, breaking it apart while cooking for 5-6 minutes, until fully cooked.
Stir in garlic, spinach, onion powder, black pepper, Italian seasoning, salt, and tomato sauce.
Cook for 2 more minutes, then remove from heat.
Mix in mozzarella and cottage cheese. Let cool slightly.
Assemble the Hot Pockets
Roll out dough into 4 equal rectangles (if using homemade dough).
Place 2-3 tbsp of filling onto one side of each rectangle.
Fold over and press edges with a fork to seal.
Brush the tops with beaten egg for a golden crust.
Cook the Hot Pockets
Oven Method:
Preheat oven to 375°F (190°C).
Place on a parchment-lined baking sheet and bake for 15-20 minutes, until golden brown.
Air Fryer Method:
Preheat air fryer to 375°F (190°C).
Cook for 10-12 minutes, flipping halfway, until crispy.
