Ingredients

- 1 cup pecans, chopped
- 2 tbsp butter
- 2 tbsp brown sugar
Instructions
Start by preparing the pecans. Melt butter in a skillet over medium heat, then add chopped pecans and brown sugar. Stir continuously for 3–5 minutes until the nuts are toasted and coated in a caramel-like glaze. Remove from heat and allow them to cool completely.
In a saucepan, combine heavy cream, milk, and half the sugar. Heat gently until warm but not boiling. In a separate bowl, whisk egg yolks with the remaining sugar until pale and smooth. Slowly pour the warm milk mixture into the egg mixture while whisking constantly to avoid curdling.
Return the mixture to the saucepan and cook over low heat, stirring continuously until it thickens enough to coat the back of a spoon. Remove from heat, stir in vanilla extract and salt, then let it cool completely.
Once cooled, churn the mixture in an ice cream maker according to the manufacturer’s instructions. In the final minutes of churning, fold in the buttered pecans. Transfer to a container and freeze for 3–4 hours until firm.
