Homemade Peach Ice Cream
Ingredients
For the Peach Puree:
4 large ripe peaches (about 2 cups, peeled & chopped)
2 tbsp granulated sugar
1 tbsp lemon juice
For the Ice Cream Base:
2 cups heavy cream
1 cup whole milk
¾ cup granulated sugar
1 tsp vanilla extract
¼ tsp salt
4 large egg yolks
Optional Add-ins:
½ cup diced peaches (for texture)
1 tbsp bourbon or peach liqueur (for depth of flavor)
Instructions
Prepare the Peach Puree
Peel and chop the peaches into small pieces.
In a saucepan over medium heat, combine peaches, sugar, and lemon juice.
Cook for 5-7 minutes, stirring occasionally, until the peaches soften and release juices.
Remove from heat, let cool slightly, then blend into a smooth puree. Set aside.
Make the Ice Cream Base
In a medium saucepan, heat the heavy cream, milk, sugar, vanilla, and salt over medium heat until warm (do not boil).
In a separate bowl, whisk the egg yolks.
Slowly pour ½ cup of the warm cream mixture into the yolks while whisking constantly (this tempers the eggs).
Pour the yolk mixture back into the saucepan and cook on low heat, stirring constantly, until the mixture thickens slightly (about 3-4 minutes). Do not let it boil.
Remove from heat and strain through a fine-mesh sieve into a clean bowl.
Combine & Chill
Stir the peach puree into the ice cream base.
Cover and refrigerate for at least 4 hours (or overnight) until completely chilled.
Churn the Ice Cream
Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions (about 20-25 minutes).
In the last 5 minutes, add diced peaches (if using) and any optional add-ins.
Freeze & Serve
Transfer the ice cream to an airtight container and freeze for at least 2 hours before serving.

No Ice Cream Maker? Freeze the mixture in a shallow dish, stirring every 30 minutes for 3-4 hours.
