Homemade Rocher Balls – Super easy to prepare!
Ingredients
Dark chocolate with 50% cocoa: 500 g
Finely ground hazelnuts: 90 g
Icing sugar : 80 g
Egg whites: 6
Sugar: 160 g
Preparation
Sift the ground hazelnuts and icing sugar together into a large bowl.
In another bowl, beat the egg whites until stiff, initially adding part of the sugar. Once it begins to thicken, add the rest of the sugar and continue beating until you obtain a firm meringue.
Using circular movements, fold the meringue into the hazelnut mixture using a spatula. Be careful to do this gently to maintain the airy structure of the meringue.
Preheat the oven to 120°C.
Line a baking sheet with parchment paper. Using a teaspoon dipped in cold water, place small piles of the mixture onto the sheet.
Place in the oven and bake for 10 minutes. Then reduce the temperature to 90°C and cook for an additional hour.
Remove from the oven and allow the balls to cool completely.
Melt the chocolate in a bain-marie or in the microwave, being careful not to burn it.
Dip each ball into the melted chocolate, allowing any excess chocolate to drip off.
Place the chocolate covered balls on a baking sheet lined with parchment paper and let sit for an hour or until the chocolate solidifies.
