Homemade Soft Milk Bread
Ingredients
- 150 ml milk
- 6 g yeast (about 2 tsp)
- 250 g wheat flour (about 2 cups)
- 50 g powdered sugar (about ¼ cup)
- ¼ tsp salt
- 10 g milk powder (about 1 tbsp)
- 15 g butter (about 1 tbsp)
- 1 egg yolk (for egg wash)
- Sesame seeds (optional, for topping)
Directions
Activate the Yeast:
- Pour 150 ml of milk into a large bowl.
- Add 6 g of yeast into the milk and let it activate for 5 minutes. You should see bubbles or froth, indicating that the yeast is working.
Prepare the Dough:
- To the activated yeast mixture, add 250 g of flour, 50 g powdered sugar, ¼ tsp salt, and 10 g of milk powder.
- Mix the ingredients well until they form a dough. Then, knead the dough for about 10 minutes until it becomes smooth and elastic.
- Add 15 g of butter to the dough and continue kneading until the butter is fully incorporated and the dough is soft and smooth.
First Rise:
- Cover the dough with a clean kitchen towel or plastic wrap and let it rise for about 1 hour, or until it doubles in size.
Shape the Dough:
- Once the dough has risen, punch it down gently to release the air.
- Divide the dough into 3 equal parts.
- Shape each part of dough into a loaf or rolls, following the technique shown in the video (you can form simple round or elongated loaves, or use a loaf pan for a more classic shape).
- Let the shaped dough rest for 15 minutes to rise again before baking.
Prepare for Baking:
- Brush the top of each loaf with egg yolk for a golden, glossy finish.
- Optionally, sprinkle with sesame seeds for added crunch and flavor.
Bake the Bread:
- Preheat the oven to 170°C (340°F).
- Bake the bread for about 25 minutes, or until the bread is golden brown on top and sounds hollow when tapped on the bottom.
- Once done, remove the bread from the oven and let it cool for a few minutes before slicing.
