Homemade Taco Casserole

Ingredients:

  • 1 lb ground beef or turkey
  • 1 small onion, diced
  • 1 packet taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 2 cups tortilla chips, crushed
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1/2 cup sliced green onions (optional)
  • Fresh cilantro for garnish (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C). In a large skillet, brown the ground beef or turkey over medium heat, adding the diced onion until softened. Drain any excess fat, then stir in the taco seasoning, black beans, corn, and diced tomatoes. Cook for a few minutes until heated through.
  2. In a greased 9×13-inch baking dish, layer half of the crushed tortilla chips, followed by half of the meat mixture. Spread half of the sour cream over this layer, then sprinkle with one cup of cheese. Repeat the layers with the remaining ingredients.
  3. Top the casserole with the remaining cheese. Bake for 25-30 minutes, or until the cheese is bubbly and golden.
  4. Remove from the oven and let it cool for a few minutes. Garnish with green onions and cilantro, if desired. Serve warm and enjoy!
