Ingredients
For the Salmon
4 salmon fillets (about 6 oz each)
2 tbsp olive oil
¼ cup honey
3 cloves garlic, minced
2 tbsp soy sauce (or tamari for gluten-free)
1 tbsp fresh lemon juice
1 tsp Dijon mustard (optional, for extra depth)
½ tsp smoked paprika
½ tsp black pepper
½ tsp salt
½ tsp red pepper flakes (optional, for heat)
For the Roasted Broccoli
3 cups broccoli florets
2 tbsp olive oil
½ tsp garlic powder
½ tsp salt
½ tsp black pepper
½ tsp red pepper flakes (optional)
1 tbsp grated Parmesan cheese (optional)
Instructions
Prepare the Marinade
In a small bowl, whisk together honey, minced garlic, soy sauce, lemon juice, Dijon mustard, smoked paprika, black pepper, and red pepper flakes.
Marinate the Salmon
Place the salmon fillets in a shallow dish or a zip lock bag. Pour half of the marinade over the salmon, coating each fillet evenly. Let it marinate for at least 15 minutes (or up to 1 hour in the fridge for deeper flavor).
Roast the Broccoli
Preheat your oven to 400°F (200°C).
Toss the broccoli florets with olive oil, garlic powder, salt, and black pepper. Spread them evenly on a baking sheet.
Roast for 10 minutes, then stir and push them to one side of the baking sheet.
Bake the Salmon
Line the other side of the baking sheet with parchment paper and place the marinated salmon fillets on it. Brush with the remaining marinade.
Bake for 12-15 minutes or until the salmon is cooked through and flakes easily with a fork.
Broil for a Glaze
Optional: Broil the salmon for 1-2 minutes at high heat to caramelize the honey garlic glaze.
Sprinkle roasted broccoli with Parmesan cheese before serving.
Serve & Enjoy
Plate the salmon with roasted broccoli on the side and drizzle any extra pan juices over the top. Serve immediately!
Tips & Tricks
For extra caramelization, sear the salmon in a pan for 2 minutes per side before baking.
Swap the broccoli for asparagus, Brussels sprouts, or green beans if desired.
Don’t overcook the salmon—check at 12 minutes to avoid dryness.
Meal prep option: Make extra and store in an airtight container for up to 3 days in the fridge.
