Honey Garlic Chicken Stir Fry
Ingredients:
2 tablespoons olive oil
1/2 bundle asparagus, cut into pieces
4 oz mushrooms, sliced
1 small yellow squash, sliced
1 small zucchini, sliced
1 red bell pepper, cut into chunks
Salt and pepper, to taste
1 pound chicken breast, cubed
1/4 cup soy sauce
1/4 cup honey
1 teaspoon sesame oil
1/2 cup chicken broth
3 cloves garlic, minced
2 teaspoons cornstarch
Pinch of red pepper flakes (optional)
Instructions:
Prepare the vegetables:
Wash and chop the asparagus, mushrooms, yellow squash, zucchini, and red bell pepper into bite-sized pieces. Set them aside.
Cook the chicken:
Heat 1 tablespoon of olive oil in a large skillet or wok over medium heat. Add the cubed chicken and season with salt and pepper. Cook until browned and cooked through (about 5-7 minutes). Remove the chicken from the pan and set it aside.
Cook the vegetables:
In the same pan, add the remaining 1 tablespoon of olive oil. Add the asparagus, mushrooms, yellow squash, zucchini, and red bell pepper. Stir-fry the vegetables for about 5-7 minutes until they are tender but still crisp. Season with salt and pepper to taste.
Prepare the sauce:
In a small bowl, whisk together the soy sauce, honey, sesame oil, chicken broth, minced garlic, cornstarch, and red pepper flakes (if using).
Combine everything:
Add the cooked chicken back into the pan with the vegetables. Pour the
sauce over the chicken and vegetables. Stir to coat everything evenly. Cook for an additional 2-3 minutes, until the sauce thickens and everything is well coated.
Serve:
