1 pound shrimp, peeled and deveined

2 cups mixed vegetables (like bell peppers, zucchini, and carrots)

1/4 cup honey

2 tablespoons soy sauce

2 tablespoons olive oil

3 garlic cloves, minced

1 teaspoon ginger, grated

Salt and pepper to taste

Fresh cilantro or green onions for garnish

Lemon wedges for serving

Aluminum foil

Instructions:

Preheat your grill or oven to 400°F (200°C).

In a bowl, mix together the honey, soy sauce, olive oil, minced garlic, and grated ginger. Set aside.

Tear off large pieces of aluminum foil, enough to make a packet for each serving (about 12×12 inches).

On each piece of foil, layer the mixed vegetables and then place an equal amount of shrimp on top.

Drizzle the honey-garlic mixture over the shrimp and veggies. Season with salt and pepper.

Fold the sides of the foil over to create a sealed packet, making sure there’s space inside for steam to circulate.

Place the foil packets on the grill or in the oven. Cook for about 15-20 minutes until the shrimp are pink and the veggies are tender.

Carefully unwrap the packets (watch out for steam!) and garnish with fresh cilantro or green onions. Serve with lemon wedges on the side.
