Ingredients
Honey Lime Chicken
2 chicken breasts, sliced or cubed
1½ tbsp olive oil
2 tbsp honey
Zest of 1 lime
2 tbsp lime juice
2 garlic cloves, minced
½ tsp paprika
Salt and black pepper to taste
Rice Layer
1 cup cooked white or brown rice
1 tbsp lime juice
Salt to taste
Avocado Layer
2 ripe avocados, diced
1 tbsp lime juice
Salt and pepper
Garnish (optional)
Cilantro or parsley
Chili flakes
Sesame seeds or toasted almonds
Instructions
In a bowl, mix olive oil, honey, lime zest, lime juice, garlic, paprika, salt, and pepper. Add the chicken and toss well. Let marinate for 10–15 minutes.
Heat a skillet over medium heat and cook the chicken for 4–5 minutes per side until golden and lightly caramelized. Remove from heat and rest for a couple minutes.
Season warm rice with lime juice and salt. Toss diced avocado with lime juice, salt, and pepper.
To assemble, layer rice first, then avocado, and top with chicken. Garnish with herbs or chili flakes and serve immediately.
