4 salmon fillets
1/4 cup honey
1/4 cup Dijon mustard
2 tablespoons olive oil
2 cups mixed vegetables (such as bell peppers, zucchini, and carrots)
Salt and pepper to taste
Fresh herbs (like parsley or dill) for garnish

Instructions:
Preheat your oven to 400°F (200°C).
In a small bowl, whisk together the honey, Dijon mustard, and olive oil until well combined.
Cut four large pieces of aluminum foil and place them on a baking sheet.
In the center of each piece of foil, place a salmon fillet and drizzle with the honey mustard mixture.
Arrange the mixed vegetables around the salmon. Season everything with salt and pepper.
Fold the sides of the foil over the salmon and vegetables, making a sealed packet.
Place the baking sheet in the oven and bake for about 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
Carefully open the foil packets (watch out for steam!) and garnish with fresh herbs and lemon slices before serving.
