For the Filling:

1 tablespoon olive oil

½ pound Italian sausage (or ground beef)

½ small onion, diced

½ bell pepper, diced (optional)

1 cup mushrooms, sliced (optional)

1 teaspoon garlic, minced

1 cup pizza sauce (store-bought or homemade)

½ teaspoon Italian seasoning

¼ teaspoon red pepper flakes (optional)

1 cup mozzarella cheese, shredded

¼ cup parmesan cheese, grated

For the Crust:

1 refrigerated pizza dough (or crescent roll dough)

1 tablespoon butter, melted

½ teaspoon garlic powder

½ teaspoon dried oregano

Instructions

Step 1: Preheat & Prep

Preheat your oven to 400°F (200°C). Grease four oven-safe ramekins (8-ounce size) with nonstick spray or butter.

Step 2: Cook the Filling

  1. Heat olive oil in a skillet over medium heat.
  2. Add sausage (or ground beef) and cook until browned, breaking it up with a spoon.
  3. Stir in onion, bell pepper, and mushrooms (if using), and sauté until soft (about 3 minutes).
  4. Add garlic, stir for 30 seconds, then pour in the pizza sauce.
  5. Mix in Italian seasoning and red pepper flakes (if using). Simmer for 2-3 minutes.
  6. Remove from heat and stir in mozzarella and parmesan cheese until melted.

Step 3: Assemble the Pot Pies

  1. Fill the ramekins with the cheesy pizza filling.
  2. Roll out the pizza dough and cut it into circles slightly larger than the ramekin tops.
