Individual Cheesy Pizza Pot Pies

Ingredients:(Servings: 4)
For the Filling:
1 tablespoon olive oil
½ pound Italian sausage (or ground beef)
½ small onion, diced
½ bell pepper, diced (optional)
1 cup mushrooms, sliced (optional)
1 teaspoon garlic, minced
1 cup pizza sauce (store-bought or homemade)
½ teaspoon Italian seasoning
¼ teaspoon red pepper flakes (optional)
1 cup mozzarella cheese, shredded
¼ cup parmesan cheese, grated
For the Crust:
1 refrigerated pizza dough (or crescent roll dough)
1 tablespoon butter, melted
½ teaspoon garlic powder
½ teaspoon dried oregano
Instructions
Step 1: Preheat & Prep
Preheat your oven to 400°F (200°C). Grease four oven-safe ramekins (8-ounce size) with nonstick spray or butter.
Step 2: Cook the Filling
- Heat olive oil in a skillet over medium heat.
- Add sausage (or ground beef) and cook until browned, breaking it up with a spoon.
- Stir in onion, bell pepper, and mushrooms (if using), and sauté until soft (about 3 minutes).
- Add garlic, stir for 30 seconds, then pour in the pizza sauce.
- Mix in Italian seasoning and red pepper flakes (if using). Simmer for 2-3 minutes.
- Remove from heat and stir in mozzarella and parmesan cheese until melted.
Step 3: Assemble the Pot Pies
- Fill the ramekins with the cheesy pizza filling.
- Roll out the pizza dough and cut it into circles slightly larger than the ramekin tops.
- Place the dough over each ramekin, pressing it onto the edges to seal.
- Brush the top with melted butter and sprinkle with garlic powder and oregano.
Step 4: Bake & Serve
- Place the ramekins on a baking sheet to catch any drips.
- Bake for 18-22 minutes, or until the crust is golden brown.
- Let them cool for 5 minutes, then flip onto a plate so the cheesy filling spills over the crust.
- Garnish with extra parmesan or fresh basil if desired.
