Irresistible Custard Cream Steamed Buns!
Custard Cream:
- 200 ml milk
- 15 grams butter
- 2 egg yolks
- 35 grams sugar
- 15 grams cornstarch
- 1 teaspoon vanilla extract
Dough Ingredients:
- 125 ml warm milk
- 25 grams sugar
- 3 grams instant yeast
- 220 grams low-protein flour (all-purpose flour can be used)
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 20 ml cooking oil
Instructions:
Custard Cream:
- In a saucepan, heat milk and butter until it reaches a simmer. Set aside to cool slightly.
- In a bowl, whisk egg yolks, sugar, cornstarch, and vanilla extract until smooth.
- Slowly pour the warm milk mixture into the egg mixture while whisking continuously.
- Transfer the mixture back to the saucepan and cook over low heat, stirring constantly until it thickens into custard. Remove from heat and let it cool.
Dough:
- In a bowl, combine warm milk, sugar, and instant yeast. Let it sit for 5-7 minutes until frothy.
- Add low-protein flour, salt, baking powder, and cooking oil. Mix until a dough forms.
- Knead the dough for about 5-7 minutes until it becomes smooth and elastic.
- Divide the dough into small portions and flatten each into a disc shape.
- Spoon a dollop of custard cream into the center of each disc and seal the edges, forming buns.
Steaming:
- Place the buns onto parchment paper in a steamer basket, leaving space between each.
- Steam the buns over boiling water for 12-15 minutes or until they are cooked through.
