Irresistible Peach Cobbler Cookies (Air Fryer Version)

Ingredients
For the Cookies:
1/2 cup (113g) unsalted butter, softened
1/2 cup (100g) brown sugar
1/4 cup (50g) granulated sugar
1 large egg
1 tsp vanilla extract
1 1/2 cups (180g) all-purpose flour
1/2 tsp baking soda
1/4 tsp salt
1/2 tsp cinnamon
For the Peach Filling:
1 cup fresh or canned peaches, finely diced
1 tbsp brown sugar
1/2 tsp cinnamon
1 tsp cornstarch
For the Crumble Topping:
2 tbsp unsalted butter, cold and cubed
3 tbsp brown sugar
3 tbsp all-purpose flour
1/4 tsp cinnamon
Instructions
Prepare the Peach Filling:
In a small pan over medium heat, add diced peaches, brown sugar, cinnamon, and cornstarch.
Stir and cook for 3–5 minutes, until thickened. Let it cool.
Make the Crumble Topping:
In a bowl, combine flour, brown sugar, and cinnamon.
Add cold butter and mix using fingers or a fork until crumbly. Refrigerate until ready to use.
Make the Cookie Dough:
In a mixing bowl, cream butter, brown sugar, and granulated sugar until fluffy.
Add egg and vanilla, mix until smooth.
In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
Gradually mix dry ingredients into wet until a dough forms.
Assemble the Cookies:
Scoop 1.5 tbsp of cookie dough and flatten slightly.
Add 1 tsp peach filling to the center.
Top with another small scoop of dough, sealing the edges to form a cookie ball.
Slightly flatten, then sprinkle with crumble topping.
Air Fryer Instructions & Timing
Preheat your air fryer to 325°F (165°C) for 3 minutes.
Line the air fryer basket with parchment paper with holes punched for airflow.
Place 3–4 cookies in the basket, spaced slightly apart.
Air fry at 325°F (165°C) for 8–10 minutes, or until edges are golden and tops are just set.
Let cool in the basket for 2–3 minutes, then transfer to a wire rack.
Repeat in batches depending on air fryer size.
Tips
For extra gooeyness, add a tiny cube of cream cheese with the peach filling.
Can’t find fresh peaches? Canned (drained) or frozen (thawed) work well.
Store cookies in an airtight container for up to 3 days, or freeze unbaked dough balls for later.
